2 tablespoons calabash nutmeg (ehuru), whole or ground
2 tablespoons alligator pepper (grains of paradise), whole or ground
1 tablespoon uda (negro pepper), whole or ground
1 tablespoon cloves
1 tablespoon ginger powder
1 teaspoon black pepper
How to Make Pepper Soup Spice Mix
1. Toast the whole spices
If using whole spices, lightly toast the ehuru, uda, and alligator pepper in a dry pan over low heat for 1–2 minutes. This helps release their aroma. Be careful not to burn them.
2. Cool completely
Remove from heat and allow the spices to cool completely before grinding.
3. Grind
Grind the toasted spices into a fine powder using a spice grinder or dry mill.
4. Mix
